Hamsili kaygana

Kaygana, Karadeniz yöresine ait yumurtalı bir yiyecektir. Batı mutfağındaki krepi andırır. Günümüzdeki tarifi daha çok hamsi ve kavrulmuş sebze gibi tuzlu malzemeler içerir.

Malzemeler:

  • 1 Kase kılçığı çıkarılmış parçalanmış hamsi (Tuzlu hamsiden de yapılabilir. Önce su konur tuzu çıkarılır, kılçığı çıkarılıp parçalanır.)
  • 5 Adet yumurta
  • Yarım demet maydonoz
  • 1 Tutam nane (kuru olabilir)
  • 3-4 Adet taze soğan
  • Karabiber
  • 1,5 Su bardağı beyaz un + 1 kaşık mısır unu
  • 2 Bardak su

Yapılışı:

  1. Derin bir kaba hamsiler konur, üzerine 5 yumurta kırılır.
  2. İçine yeşil soğan, nane ve maydonoz ince ince kıyılır. Üzerine 1,5 su bardağı beyaz un, 1 kaşık mısır unu, yarım çay kaşığı tuz konur.
  3. 2 Bardak su ilave edilerek kaşık veya telle çırpılır. Akışkan kıvama gelince biraz dinlendirilir.
  4. Ardından tavaya zeytinyağı konur, biraz kızdırılır. İçine 2 dolu kepçe hazırlanan karışımdan dökülür. Çevirilerek altlı üstlü pişirilir ve servis tabağına alınır.
