Lahana dolması

Malzemeler:

  • 1 kg lahana
  • 1/2 kg kıyma
  • 2 Adet büyük kuru soğan
  • 1 Demet maydonoz
  • 1 Tutam nane (kuru olabilir)
  • 1 Çay kaşığı karabiber
  • 1 Tatlı kaşığı biber salçası
  • 1 Tatlı kaşığı domates salçası
  • 1.5 Su bardağı bulgur (pirinç de olabilir)

Yapılışı:
İçi:

  1. Kıymanın üzerine soğan ince ince doğranır.
  2. Baharatlar serpilir, 1/2 yemek kaşığı tuz eklenir.
  3. Biber ve domates salçaları eklenir.
  4. Bulguru konur.
  5. Maydonoz ve nane doğranarak eklenir.
  6. 1/2 Bardak ılık su dökülür.
  7. 1 Yemek kaşığı zeytinyağı konur.
  8. Eldiven kullanarak elle yoğurulur.

Sarması:

  1. Lahananın yaprakları yıkanarak az tuzlu su ile haşlanır.
  2. Saplarından 5-6 adet doğranarak tencerenin dibine konur.
  3. Dolmalar tek tek sarılarak sapların üzerine yerleştirilir.
  4. Sarma işlemi tamamlanınca üzerine 2 su bardağı kaynar su dökülür.
  5. Kısık ateşte buharlatılır.
  6. Suyunu çekince 1 bardak kaynar su eklenerek kısık ateşte devam edilir.
  7. Bu işlem, dolmalar pişene kadar gerektiği sayıda tekrarlanarak, piştikten sonra tenceredeki su dolma ile yüzleşecek şekilde sulu kalması sağlanmalıdır.

Sade veya sarımsaklı yoğurt ile yenir.
